Zesty Shrimp and Pasta
8 oz. linguine uncooked or i used angel hair
3/4 cup Italian Dressing
2 cups mushrooms ( i dont like mushrooms so i dont put them in)
1 small onion thinly sliced
1 14 oz. can artichoke hearts drained and quarted
1 lb. uncooked cleaned shrimp ( i use cooked i hate cooking shrimp.and i says large but i think small is better more shrimp and looks better)
1 tbsp. parsley for color and flavor
Cook pasta as directed on package
heat 1/2 cup of the dressing in a large skillet on medium heat. If you have mushrooms stir them in with onions and artichokes cook for 3 mins or until onions are crisp-tender, stir occasionally. add shimp and parsley stir cook for 2 mins if uncooked shrimp. if cooked shrimp let it go tell shrimp are heated up.
Drain pasta and return to pot. then add the shrimp mixture and add remaining 1/4 cup dressing. toss lightly sprinkle with parmesan cheese.
If you dont like artichokes swap in 1 large red pepper chopped. also if you dont like shrimp you can always put in chicken instead of shrimp or have chicken and shrimp.
